Stainless steel, aluminum cookware sets abound

Makers adopt stainless steel for its strength and durability, while aluminum is preferred for its heating capability.


  • Stainless steel models: Makers prefer the material as pieces in the metal are durable and easy to clean, and does not react to food. The drawback, however, is that stainless steel is a poor thermal conductor. To allow heat to spread faster, suppliers are incorporating encapsulated and multilayer bottoms with aluminum sheets.
  • Aluminum releases: Aluminum pieces spread heat rapidly but are lightweight and prone to scratches and dents. To make them tougher, most models are anodized. The procedure, however, reduces the cookware's heating attributes. To address this, companies are launching models with copper bases.
